Wusthof Nakiri Knife: Which is Best? Classic, Ikon, Gourmet?

Wusthof Nakiri Knife (Updated for 2017)

You have decided that you want a nakiri knife. Now the hard part begins. Which is the best? Which should you buy? The purpose of this review is simply to provide you with everything you need to know about the nakiri style knife and the Wusthof Nakiri Knife in particular. And also to help you to decide to make this blade part of the suite of knives for your kitchen or to confidently give as a gift for the kitchen of your mate, your children, your friends.  Look ==>

There comes  a time in the life of every home chef when it’s clear he or she needs better equipment. So, you’re standing in your kitchen staring at the sink. In the top drawer you have a neat little organizer to keep the spoons separate from the forks, etc. it’s all neat and tidy.

The second drawer, however, is a mass and jumble of twisted metal. This is where all those silly little gadgets go. You’re not using that rusted old vegetable peeler but you haven’t thrown it out. And in this drawer is where you have your “sharp” knives.

Sharp, maybe, is not the correct term. Maybe ‘able to be sharpened’. There are some of the first knives you ever bought in there. As well as a gift from your mother-in-law. And let’s not forget that bargain you picked up at the grocery store for $19.95.

The greatest hazard with anything you grab from this drawer is that it’s dull, which makes it dangerous. Untold numbers of little nicks & cuts ( and some not so little) have been caused by dull blades.

There is also the issue of the right tool for the job. Different knives do different things. For example:

A CLASSIC JAPANESE VEGETABLE KNIFE

Nakiri is simply Japanese for “vegetable knife.”  ‘na’ refers to leaf and ‘kiri’ means cutting.  To cut the thinnest slices look for the best Wusthof Nakiri knife. Once you get a classic nakiri in your hands, you’ll soon see why both professional chefs and good cooks around the world choose this beautiful and extremely useful tool whenever they have fruits or vegetables to prepare. With its straight blade, edge, and spine, the nakiri isn’t rocked like a chef’s knife. Instead, use a simple push cut and enjoy the clean, swift work it makes of vegetables of all kinds. For daily salad preparation or slicing vegetables for stir-fry, it can’t be beat. Finely dicing onions is fast, easy, and with the nakiri’s blunt end, safer, too.

Incredibly sharp edges and aesthetics set the nakiri knives apart from most other kitchen knives on the market today.

Wusthof Nakiri knives are double bevel cleavers with razor sharp taper edges, squared off tips, and flat design profile. Because the blade is straight, this style knife is best used for chopping. The technique of  rocking the blade over the work surface needs a curved blade. These knives are usually ground thin to ensure optimal performance, great comfort and precision cutting.

How to use a Nakiri

A Nakiri features a hollow ground blade. It is thin like a chef’s knife. It is made of carbon steel and usually has a flat edge just as a slim cleaver. This blade is designed for  up-and-down motion without  pulling or pushing. Due to a flatter edge, it’s easier to maintain uniform thinness even with hard veggies or soft fruits like tomatoes. It makes cutting vegetables safe and easy, particularly when it helps to have finesse.

Nakiris work well for mincing, chopping, and slicing any vegetable or fruit, with speed and precision, to have thinnest possible or perfectly little outcome in the form of cubes or slices. The Wusthof Nakiri Ikon is particularlly good in this regard. Considering the angle of the blade, it is sharper than the blades of other knives. Similarly, the carbon steel build makes the knife more durable than many Asian knives. The width of the blade is usually thicker, which contributes to its strength. This provides more comfort and precision when slicing hard stuff such as turnips.

Another notable feature is the full tang design. This means a single piece of steel lies across from the tip to the handle’s end. The polymer triple-riveted handle prevents moisture to accumulate between the blade and handle which limits the spread of bacteria. the Wusthof Nakiri knife is an excellent choice for preparing salads and soups as well as strips for stir-frying, with more cutting precision and less cleanup than a food processor.

You may want to have a sharpener on hand, as well. It also makes a great gift.

This one is #8 on the Amazon Best Seller List and also one of my most favorite knives. A benefit of this knife is that it comes with the flexibility of a pure cleaver exclusively made for vegetables as well as with the features of a chef’s knife. This Classic knife features a non-stick blade with edge in Granton style, sloping on both sides so that you can chop and slice well. Its blade is much sharper and retains its edge longer. The edge is designed so that pieces don’t stick to the blade. This is a major improvement.

Time after time, Amazon customers give this their highest 5 Star review for reasons like this:

“..We use ours for vegetable prep and find the knife to be stable, comfortable in the hand and easy to use..”

The Classic line is Wusthof’s best-selling line of knives. What really makes this line stand out from the gourmet is that it offers exceptional durability and has been tested time and time again by consumers.

Wusthof Cutlery remains one of the very best knife makers in the world. And if Amazon ranking is any indication, most people in America feel the same way. These knives are ranked at the very top of the Best Sellers List year after year.

We can heartfully recommend the Wusthof Nakiri Knife. Perhaps this is the first time you’ve considered anything but a regular western style blade. Or perhaps, you’ve been using another nakiri and you need to upgrade. Or perhaps you are looking for a really great gift for a birthday or a wedding shower. The Wusthof Classic Nakiri knife would be our suggestion.

 Update

After extensive testing and careful review, our choice is the Ikon. Yes it is a bit more expensive than the rest, but in our opinion, the added value far outweighs the slight increase in price. If your kitchen needs a really good vegetable prepping blade, then the Wusthof Ikon is the choice for you.

This is just what I need! I’m using a knife from IKEA. While I have nothing against IKEA, but the knife is not my favorite thing. It can be sharpened of course but i’ve been wanting a really nice knife but I’m not sure what and which to get! I’ve heard someone bragged about her Wusthof knife a while ago. How about knife to cut meat ? Any recommendation on that ?
